'Christ The
Reason For Christmas'
Christmas is a
season rife with food and festivity, underlying The Savior’s
birth; bringing joy to the world, with peace and goodwill to
His recipients. Here in Trinidad &Tobago, a must for many is
making pastelles for the Christmas menu: Cornmeal patties;
pressed flat, stuffed with highly seasoned meat, fish or
vegetables; traditionally wrapped in banana leaves, tied up
and steamed.
The bananas when green, locally referred to as 'green fig' can
be cooked from a variety of recipes.
